Directions
1. Prepare the dough
Combine the yeast, sugar, and warm water in a large bowl.
Let sit until foamy, 5 to 10 minutes.
Add the olive oil, flour, and salt. Stir to form a dough.
On a floured surface, knead for 8 to 10 minutes, or until elastic and smooth.
Put the dough in a basin that has been oiled, cover it with a moist towel, and allow it to rise for one to one and a half hours, or until it has doubled in size.
2. Get the sauce ready.
Sauté the garlic in olive oil in a saucepan over medium heat for one to two minutes.
Add salt, pepper, smashed tomatoes, and herbs. Simmer for ten to fifteen minutes.
Before using, allow to cool somewhat.
3. Put the pizza together.
Set the oven temperature to 475°F (245°C).
Put the pizza stone in the oven to preheat if you plan to use one.
On a floured surface, punch down the dough and roll it out to the thickness you choose.
Move to a heated stone or baking sheet. Evenly cover the bottom with sauce, top with cheese, and garnish.
Bake for 12 to 15 minutes until the cheese is bubbling and the crust is brown.
4. Present and Savor!
Before slicing, allow the pizza to cool for a few minutes.
For added taste, garnish with chile flakes, fresh basil, or a splash of olive oil.
